Being on a diet can be very boring and drab. Unless, of course, you are liberal with the ginger and garlic! Even though I use low sodium soy sauce, it provided enough salt without me having to break out the grinder. Win!
Diet friendly, pretty to look at, delicious to eat! Using a yellow or orange sweet pepper gives this dish nice contrast. It’s crunchy and filling with a bit of rice. As always, the rice isn’t included in the nutritional data.
Ingredients

8 oz snow peas

1 mini sweet pepper

1 scallion
-
2 cloves garlic

1 tbsp minced ginger

1 tbsp sesame oil

1 tsp low sodium soy sauce

1 tsp golden balsamic vinegar
Directions
- Finely mince the garlic and ginger
- Slice the scallion and pepper
- Heat oil in a non-stick saute pan (a ceramic one is perfect for this)
- Add the scallion, ginger, and garlic and cook for about two minutes
- Add the snow peas and peppers, cook for about six minutes more
- Add the soy sauce and balsamic vinegar, stir well and cook for two more minutes
- Serve with Basmati (or Texmati) rice
Tips
- Using a ceramic pan allows me to get away with only using a small bit of oil!
