Artichokes are one of my favorite foods! This recipe is quick and easy, and absolutely delicious! Using frozen artichokes saves a ton of time, but I wouldn’t even try it with the stuff you can find in jars. The minimal prep time is for chopping the garlic and scallions. Great side dish for beef, and goes really well with risotto as well.
Frozen artichoke hearts make a quick side dish, without a lot of calories!

Ingredients

9 oz frozen artichoke hearts

2 scallions
-
3 cloves garlic
-
1 tbsp butter

1 tbsp white wine
Directions
- Thaw artichoke hearts and pat with paper towels to remove excess moisture
- Finely mince the garlic and slice the scallions
- Heat butter in a non-stick pan
- Add garlic and scallions and cook till soft
- Add artichoke hearts, stir well
- After the artichokes are cooked through, add wine and continue to cook for about five minutes more
