We’ve established that I love artichokes. Some people think they are bland, but I’ve found you can get a lot of great flavor out of them. There is a little bit of prep work required here, but the result is delicious!
These artichokes have a great flavor from the grill, made even more tasty with balsamic vinegar! A little extra prep time is needed

Ingredients

3 large artichokes

2 cloves garlic

2 tbsp balsamic vinegar

1 tbsp olive oil

1 tsp Dijon mustard

1/2 tsp fresh cracked pepper
Directions
- Trim base off and top off of each artichoke, remove tough outer leaves
- In a fair sized pot, steam artichokes, bottoms down – flip them to tops down for a few minutes about half way through
- Press garlic and add to vinegar
- Whisk in olive oil
- Whisk in Dijon
- Stir in pepper
- Split artichokes in half
- Carefully remove choke
- Brush with oil and vinegar
- Grill for five minutes or until done, turning to avoid burning the leaves
Tips
- Keep an eye on the artichokes when steaming, cook time will be anywhere from 20 to 30 minutes. They are ready to remove when the base is tender enough to pierce with a fork and leaves pull out easily, but are not falling off.
