Adobo and Lime Roasted Corn

I love corn, especially when roasted in foil on the grill! Add some adobo and lime and what could possibly go wrong? Nothing, that's what. Absolutely nothing!

Ingredients

  • 3 ears of corn
  • 1 tbs butter
  • 1 tsp adobo sauce
  • 2 cloves garlic
  • 1 tbsp fresh cilantro leaves
  • 1/2 lime
  • Dash salt
  • Dash freshly ground pepper

Directions

  1. Soften the butter and mix well with the adobe sauce
  2. Finely mince garlic and cilantro leaves, add to the adobe and butter mixture
  3. Squeeze the lime into the butter adobo
  4. Add salt and pepper
  5. Blend well and allow to sit for about 10 minutes to firm up
  6. Coat the corn with the butter adobo mixture
  7. Wrap tightly in foil and grill until corn is tender
